a tasty appetizer

For the first time since moving, a couple days ago I decided I wanted to make something. Something simple, with inexpensive ingredients, that I could share with the roommates. So I browsed the ol’ recipe board on Pinterest until I found something that fit the bill.

That would be this recipe from Scout blog. I replaced the cherries with cherry tomatoes and the tarragon with basil. I also skipped the sherry vinegar (which we didn’t have on hand and I wasn’t about to buy), but my roommate soon figured out that balsamic vinegar made for an agreeable substitute.

These were tasty little devils. Even though they’re technically an appetizer, I definitely ate half of that pan you see above and made it my supper instead. I just couldn’t stop after a couple…
